Shrimp Creole Recipe

Shrimp Creole:
3 Tablespoons butter
1 cup onions, chopped
1/2 cup, plus 2 Tablespoons celery, chopped
1/2 cup green peppers, chopped
3 cups roma tomatoes, diced
1+1/2 cups tomato sauce
1 clove garlic, minced (or more to taste)
1/2 teaspoon tabasco sauce (or more to taste)
1/2 Tablespoon worcestershire sauce
1 lb. fresh shrimp, peeled, deveined

Seasoning Mix:
1/2 teaspoon white pepper
1/8 teaspoon cayenne pepper (or more to taste)
1/8 teaspoon black pepper
3/4 teaspoon thyme
1 whole bay leaf
1 teaspoon dried basil

Melt 1+1/2 Tablespoons butter in pan and saute onions, green peppers, celery, garlic and bay leaf for 2 minutes.

Add fresh tomatoes, tomato sauce, tabasco, worcestershire - and simmer for 15 minutes. NB: Vegetables should be soft.

Add seasoning mix and simmer for 20 minutes more.

Saute freshly peeled shrimp in remaining butter until pink and just tender. Toss with sauce and serve over rice or pasta.
