Cumin Balsamic Roasted Mushrooms Recipe

Cumin-Balsamic Roasted Mushrooms:
4 cloves garlic, minced
1 teaspoon cumin seeds, toasted and coarsely ground
1/2 teaspoon ground ancho chilli powder
1/4 teaspoon freshly ground black pepper
3 Tablespoons balsamic vinegar
3 Tablespoons tamari (similar to soy sauce, but darker and richer)
2 Tablespoons extra-virgin olive oil
16 ounces cremini or white button mushrooms

Preheat the oven-griller.

In a mixing bowl, whisk together all ingredients except the mushrooms. Add the mushrooms, toss to coat and set aside to marinate 10 to 15 minutes.

Place the mushrooms, stems up, in a baking dish, and brush marinade over them. Grill for 5 to 7 minutes, or until the mushrooms are brown and dry.

Serve warm or let cool to room temperature.
