Indian, Indisches, Garam Masala Recipe

Garam Masala:
6 Tablespoons coriander seed
4 Tablespoons cumin seed
1 Tablespoon black peppercorns
2 small sticks cinnamon
1 teaspoon whole cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon mace

Roast each ingredient except ground ones in a pan in the oven, keeping an eye on them and tossing the pan from time to time. You will be able to smell when they're ready! Let them cool and then blend them. A small coffee grinder is ideal, but for a small amount do it the traditional Indian way - in a mortar with a pestle. Keep the garam masala in an airtight jar and it will stay fresh for months.
