Creme de Cacao Recipe II

Creme de Cacao II:
8 Tablespoons Dutch Process Cocoa (eg. Droste's)
1 Fifth Vodka
1+1/2 cups Sugar Syrup
1 teaspoon Vanilla Extract

Stir the cocoa into a little vodka in a cup until it is dissolved. Gradually add a little more vodka, mixing as you add. Mix this cocoa solution and add the rest of the vodka, sugar syrup and vanilla in a large bottle. Shake well and steep for two weeks, shaking well several times during the steeping process.

Let stand undisturbed for one month.

Decant the liquid and discard the chocolate that has settled to the bottom.

The liqueur should be shaken a little before using.
