Pate Au Chou (Cream Puff Pastry) Recipe

Pate Au Chou (Cream Puff Pastry):
1/4 cup butter or margarine
1 cup water
1 cup flour
1/4 teaspoon salt
4 eggs

Place water in saucepan with butter or margarine. Bring to boil until butter is almost melted. Remove from heat. Quickly stir in flour and salt with wooden spoon until dough forms tight ball around spoon.

Beat in eggs one at a time until well blended. Continue beating mixture until batter is smooth and satiny, about 5 minutes. You may use an electric mixer with a paddle attachment.

Use as required.
Bake at 450F until done.
