Mexican Cornbread Recipe

Mexican Cornbread:
1 cup yellow corn meal, self rising
1 cup milk
2 eggs beaten
3/4 teaspoon salt
1/2 teaspoon baking soda(optional - only if using plain cornmeal)
1/2 cup bacon grease
1 can cream style corn
1 lb ground beef
1 lb chedder cheese (grated)
1 chopped onion
4 to 5 chopped jalapeno's (fine chopped)

Combine cornmeal, milk, eggs and salt (opt. soda) and bacon grease and corn. Mix good and set aside.

Cook ground beef until lightly brown, drain grease and set aside.

Grease 13x9x2 pan. Pour half cornmeal mixture in to pan put hamburger beef over mixture and sprinkle grated cheese on top, then add onions and peppers, then remaining cheese, pour the remaining cornmeal mixture on top.

Bake at 350 degrees F for 50 minutes.
