Roasted Honey Carrots Recipe

Roasted Honey Carrots:
1 Tablespoon firmly packed brown sugar
2 Tablespoons of butter or margarine
2 Tablespoons of honey
4 cups of baby carrots
2 Tablespoons water
salt and pepper if desired

Heat oven to 400F.

Stir together brown sugar, butter and honey in a small bowl until smooth and set aside.

Place carrots and water into an ungreased 13x9 baking dish. Cover with aluminum foil and bake for 30 to 35 minutes or until carrots are fork tender.

Increase oven temperature to 450F. Remove aluminum foil and stir in butter mixture. Continue baking for 10 minutes, stirring occasionally, until carrots are glazed and just begin to brown.
