Columbian Chicken Recipe

Columbian Chicken Recipe

6 Chicken thighs.
6 strips of bacon. Hickory smoked is best. Don't use maple flavored.
Powdered Cinnamon.
I can orange juice concentrate.

Strip off skin from the Chicken thighs and discard.
Wrap each thigh in bacon and place in a cooking dish.
Utterly cover the tops with cinnamon powder... really lay it on. You can't use too much. Use enough so you can not see the chicken or bacon.
Spoon out the frozen orange juice concentrate onto the chicken. It doesn't have to be evenly distributed.
Place dish in 350 degree (F) oven for 55 minutes. Or 400 degrees for 45 minutes... it doesn't seem to matter just as long as the chicken is cooked. The nice thing about this dish is it is almost impossible to overcook. The orange juice keeps the chicken moist and juicy.

Serve pieces and discard (I know, what a waste) the leftover sauce from the cooking dish.

It is hard to ruin this dish with the possible exception of using too little cinnamon. A friend of mine forgot to use chicken thighs and used breasts instead and it came out great.

The dark meat of the the chicken thigh with the sweet orange juice and cinnamon along with the bacon flavor is rather incredible.
